Nothing Important

Last night I went to my favorite aerobics class at my new gym. The teacher is hands down the best one I've had since England. Why on earth was I surprised when she announced that she's leaving? Nooooooooo! Not again!

This morning I made french toast because Jackson and I are tired of eating Nutrigrain waffles and plain toast with jelly. Jackson loved it and now I want to try making banana-stuffed french toast like they have at The Houstonian, which is something so wonderful that it haunts my dreams even after four years.

This afternoon Jackson ate spaghetti with a fork like a big boy and didn't make too bad of a mess. I ate a lean pocket and it was pretty forgettable. Later I had Doritos.

Right now Jackson is asleep and I need to be showering and getting ready for date night with Hubs. What I really want to do is drink some tea and enjoy the silence.

This evening Curtis is taking me to Anthropologie to return the bedding I ordered. I hope to come across some fun things for some wonderful mothers we will be celebrating the next two weekends.

Tonight we are having dinner at America's by the Galleria. I already know what I'm getting. Without a doubt it will include tres leches.

Tomorrow my sister is flying home from Atlanta. Her hubby will join her in Houston this weekend so they can both see their moms. They are going to die over how much Jackson is talking since the last time they saw him.

That is all. I can hear The Mister beginning his wake up process, so I have to pick my indulgence quickly - shower or tea? SHOWER OR TEA? Shower it will be.

I want to learn to love tea. Do you have any suggestions? What do you put in it? I am thinking it might help me lose weight ... right now I am way to much into the Doritos....

What is "tres leches?" 3 milks?

You're so good to go to aerobics, bless your heart. I have been finding every reason NOT to go exercise lately! I've gone from a 16/18 to a 6, so I need to go to keep it off. *sigh* I'm not sure what's up because I usually enjoy it. Pray that this phase will pass quickly! :)

I love that your post was mainly about food. You sound like me - trying so hard to be good with a healthier lunch and then losing it later for some doritos. Sigh. Is there hope for us?
Are nutrigrain waffles low in fat?

I was super sad about her leaving the gym as well. Hopefully she'll stay for a few more weeks though to make it through the end of May and then the search begins for fun morning classes. AND the Saturday instructor is done with step now until after the baby. What will we do?

Of course I'm not up there this week bc I have something every day after school, but maybe I'll see you this weekend or next week. :)

Under those circumstances, I'd have chosen the shower too. I've loved your last few posts. I learn so much from you, Amanda. Arranging the day to bring out the best in my child, writing letters to chronicle the stages in his life, banana-stuffed French toast!!! Sometimes I wish you were 8 years ahead of ME on this motherhood journey, instead of the other way around! Hope you had a great night. Blessings to all three of you.

My son is a few months older than yours, and I have a quick tip for spaghetti. Use ORZO instead of spaghetti noodles. Orzo is pasta that looks like rice. It tastes the same, but since it's smaller, it's much easier for little ones to maneuver. It also keeps you from the hassle of having to cut up the noodles.

Another great orzo treat...mix it with some pesto sauce, sauteed veggies (onion, garlic are a must), tomatoes, olives, and feta cheese. A little bite of heaven!
